MAIN ENTREE: PLEASE CHOOSE ONE ITEM:
 
PORK TENDERLOIN WITH PROSCIUTO HAM & CHERRY SAUCE:
Tender roasted pork tenderloin stuffed with prosciuto ham, rolled, and slow baked. Served with a warm cherry glaze.
 
ITALIAN STUFFED BEEF ROAST:
Our roast is butter flied open, stuffed with spinach pesto, Parmesan, and prosciuto ham, then rolled and slow baked. Served with a Madeira sauce.
 
YANKEE POT ROAST:
Slow roasted with vegetables and carved at the buffet.
 
CHILI BRAISED BONELESS SHORT RIBS:
Marinated and braised slowly for hours in a rich mildly spicy sauce.
 
BAKED "BONE IN" HAM:
A flavorful smoked ham, slow roasted. Served with sweet mustard sauce.
 
WHOLE OVEN ROASTED TURKEY:
Just like a home cooked turkey dinner. Herb, celery and onion bread stuffing accompanied by turkey gravy and cranberry sauce.                       
 
BARBECUED BEEF BRISKET:
Our brisket is slow cooked all night for a most flavorable cut of beef. Basted and served with a mildly spiced barbecue sauce.
 
FRUIT STUFFED PORK LOIN:
Tender pork loin stuffed with dried apricots, apples, and plums and slow roasted.  Served with an apricot mustard cream sauce.
 
CHICKEN DIJON:
Boneless, skinless chicken breasts dipped in butter with a touch of Dijon Mustard, breaded, topped with Parmesan cheese and baked to perfection.
 
CHICKEN CORDON BLEU:
Boneless tender chicken breast filled with ham and Swiss cheese and baked.
 
CHICKEN TERIYAKI:
Chicken thighs marinated and baked in a tasty teriyaki sauce. Topped with a pineapple, chopped onion, and diced red pepper sauce.
 
HAZELNUT CHICKEN:
Tender pieces of skinless chicken breast baked in a hazelnut crust and served with an orange apricot sauce.
 
ROAST BARON OF BEEF:
Slow cooked all night to insure a tender, juicy cut. Seasoned with garlic and herbs. Served with a creamy horseradish sauce and au jus. (Surcharge of $1.95pp 100 guests and up - $2.50pp under 100 guests.)
 
WESTERN BARBECUE:
A combination of pork ribs, chicken, and beef ribs marinated in our own zesty barbecue sauce and slow cooked over an open fire. (Surcharge of $2.50pp)
 
BARBECUE SALMON AND BARBECUE CHICKEN:
Fresh filet of salmon sides basted in lemon butter and slow grilled. Accompanied by tender chicken breast marinated in a sweet, tangy barbecue sauce and slow grilled over an open fire. Served with a sour cream dill sauce and barbecue sauce. (Surcharge of $2.95pp 100 guests and up - $3.50pp under100 guests.)
